You can edit a cell surface using the in-place dialog. Right-click on it (either in the Graphics window, or in the object tree), and select Edit Part In Current Scene.
In the dialog, click Apply to implement your changes.
However, if certain conditions are not met, this menu item is disabled (grayed out). In such a situation, you can simply click on the derived part's node in the simulation tree and use the properties.
